1 1/4 cup oil
2 cups sugar
2 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 med size can crushed pinapple
1/2 small bag angel flake cocoanut
1 cup walnuts, chopped
2 cups finly ground carrots
In large size bowl; Cream together with mixer, salad oil, sugar, eggs & vanilla; set aside.
In another bowl; Sift together flour, baking powder, soda, cinnamon & salt.
Add half dry mixture to wet mixture; add pinapple; mix well.
Add rest of dry mixture; mix well.
Fold in cocoanut, nuts and carrots.
Bake in greased 9 1/2X13 1/2 pan in 350 oven 50 minutes then test.
Frosting: 1 box powdered sugar, 1 cube margarine 1 8oz cream cheese 2 tsp vanilla.
Soften cheese and margarine and cream. Add sugar and vanilla and mix well.
